Sweet potatoes

We get tons of sweet potatoes from our CSA. Here's what I do with them.

1. Wash them well.


2. Poke them with a fork and roll in foil.


3. Bake at 400 degrees for about 45 minutes or until soft.


4. Let it partially cool, scrape out inside.


5. Mash in food processor. Add enough water to get desired consistency.


6. Freeze.


7. Enjoy!
